Campfire Egg Cups with Ham: Easy Camping Breakfast!

Here it is: an easy camping breakfast that you can eat any time of the day!  These camping egg cups with ham are yummy, easy to make, and the process is simple enough that even the kids can help!

When we’re camping with the kids our go-to meals are usually simple, familiar, and involve minimal cleanup.  This is one such meal.

Add some fruit and toast for a complete breakfast or a big green salad and make them for dinner.  If you have a cooler or fridge, they’ll keep for a few days if, for some reason, these yummy eggs weren’t all eaten up the first day!

Below you’ll find the supplies needed, the basic ingredients (the tasty extra additions at the bottom), and a general recipe to make one dozen egg cups.

Supplies:

Basic Ingredients for egg cups:

  • spray oil, butter, or oil to line the muffin tins
  • 12 eggs
  • thinly sliced ham, about 12-16 pieces.  Sandwich meat ham works best.
  • Salt and pepper for seasoning

How to make the camping egg cups:

  1. Generously oil the muffin tins with butter or oil.
  2. Line each cup with a piece of ham, pushing the ham down, creating a cup to hold the egg.
  3. Crack an egg into each ham cup in the muffin tins.
  4. Sprinkle with salt and pepper if desired.
  5. Cover the entire tray with tin foil, tenting the tin foil up so it is not touching the ham and eggs.  You could also cover the muffin tins with a cookie sheet.
  6. Place the covered muffin tin over a hot bed of coals or low-flaming campfire.
  7. Rotate regularly and keep the tins out of direct flame or your eggs could burn.
  8. Cooking times will vary, but ours take about 10-15 minutes.
  9. Check the eggs and remove from heat when the eggs are cooked to your liking.
  10. Remove the ham and egg cups from the muffin tin carefully.
  11. Enjoy!

If you and your family prefer things plain and simple, then just stick with the ham and eggs.  But, if you’re up for some variety and fun you can add a whole lot of other ingredients to these egg cups!

Our kids really enjoy personalizing their own egg cups with their preferred ingredient choices.

In the past we’ve used various combinations of these additions:

Ingredient additions to the campfire egg and ham cups:

  • spinach or kale (frozen works nicely because it is compact)
  • diced tomatoes
  • cheese (cheddar, feta, brie, or your favorite)
  • green onion
  • fresh basil
  • diced avocado
  • chopped cooked bacon
  • chopped cooked broccoli

If using additional ingredients you may need to alter the process slightly.

Because the added ingredients will take up more room in your muffin cups, you should crack all the eggs into a larger bowl, scramble them up and then pour these scrambled eggs into the ham-prepared cups.  You’ll likely need 2-3 fewer eggs for the dozen cups if you’re adding extra ingredients.
